Small Batch Triple Chocolate Banana Muffin Gluten-friendly Recipe

I bring you another Muffin recipe! If you missed my last one, which I made two years ago you can find it here “Small Batch Matcha and Coffee Muffins”. I based them off the Muffin Milk Planet. This time around this recipe is based off another plant in the Muffin Milk solar system. The strangely banana shaped planet found in last week's post! If you like muffins keep reading, you won’t regret it.

Good quality chocolate will always taste much better than low quality. For my chocolate chips I am using these Colombian Chocolate buttons I was gifted over the holidays. I broke them into smaller pieces, then added them to the batter. I chose to make this muffin Gluten-friendly, but you can use regular flour for your muffins. Bread flour or whole wheat flour is recommended for muffins for the denseness. I normally use a mixture of half AP flour and half WW flour.

Bake Time: 20-25 minutes

Total Time: 40 Minutes

Yeild: 6-7 muffins

Servings: 6-7 Servings


Small Batch Tripple Chocolate and Banana Muffins

Ingredients:

1 cup of flour (King Aurthur GF Measure for Measure Flour)

¼ Cocoa Powder (GF)

1 tsp baking powder

¼ tsp salt

1 medium banana

½ cup sugar

1 egg

6 tbs oil (or melted butter)

¼ cup of milk (I used almond milk)

*Chocolate chips to your liking


Toppings:

Chocolate sauce

Extra chocolate chips (optional)


Instructions:

  1. In a small bowl mix the dry ingredients flour, baking powder and salt.

  2. In a large bowl mash the bananas well, then add the sugar, egg, oil and milk. Mix together very well

  3. Add the flour to the wet mixture and fold with a spatula till well incorporated, do not over mix!

  4. Add your preferred chocolate chips to the dough, mix till incorporated.

  5. Preheat the oven to 375. Line 8 medium muffin tins with cupcake liners.

  6. Scoop evenly into 6/7 molds fill to the top. Don’t be shy muffins are supposed to be thick. 

  7. Add your toppings if using some.

  8. Bake in the oven for 9 minutes. Then turn down the heat to 350 and bake for 12-17 minutes or until toothpick inserted comes out clean 

  9. Let it cool in the pan for a minute or two before transferring onto a wire rack.

  10. Add chocolate drizzle and enjoy your muffins warm!

These are muffins I based off a planet in the Muffin Milk Solar system. This is what I think Choco Banan would taste like.
